Spring and fall, while not too different on paper, have pesky peccadilloes for a smoker, mainly when smoking the quantities of meat we produce daily.

A Texas barbecue joint will have its own challenges with dry air, more intense heat in the summer, and different fuel woods being easier to access than northern white oaks. Georgia barbecue must contend with high humidity and powerful heat; their woods will harbor more moisture and provide more potent aromatics to the meat. Even in other parts of the world, there will be variances to grilled and smoked meats due to how those cultures developed their own styles (like the Indian tandoori style of cooking or Chinese char siu—each a valid form of cooking under the “barbecue” umbrella).
